Brendan first learned to love making maple syrup in the Lanark Highlands in 2010 collecting sap in pails and boiling out in the bush. The operation moved to the farm in 2017 with some refinements. The syrup is still boiled over a wood fire out in the bush giving that tradition hint of smoky flavor. No reverse osmosis or witchcraft, syrup made the way it should be.
